Breakfast Burritos

Start your day with some delicious and healthy packed breakfast burritos, sure to get you ready for a day of adventure.
Get creative, the great thing about breakfast burritos is you can add whatever you want into your tortilla wrap it up, heat it in the pan and you are good to go!

Ingredients

For the avocado-tomato salsa (optional)

For the burritos

Directions

  1. Begin by making the avocado-tomato salsa. Halve and pit the avocado, dice into cubed pieces. Repeat the same process with the tomatoes.
  2. Mince the garlic, shallot and jalapeno and add all of the ingredients into a bowl.
  3. Add the remaining ingredients and mix to combine and set aside.
  4. Next in a separate bowl, crack the eggs and add the smoked paprika and salt, whisk to combine and set aside.
  5. Heat a large non-stick pan over a medium heat and add the sausage (or mushrooms) cook, stirring frequently until browned for approximately 4-5 minutes. Then transfer onto a plate.
  6. Next, reduce the heat and add the egg mixture to the pan. Scramble until cooked through and then transfer the eggs onto a plate.
  7. Then it’s time to assemble the burritos. Spoon about ¼ of the salsa mixture onto each tortilla. Top with sausage (or mushrooms) and then add the scrambled eggs.
  8. Lastly add the cheese (sauce if you fancy) then fold in the sides of the tortilla over the filling and roll, tucking the edges as you go.
  9. Finally, coat the pan with oil and set the heat to medium. When the pan is hot, add the burritos seam side down. Cook until golden brown (around 3 minutes) Serve warm and enjoy.
