Bacon and Mushroom Risotto

With only 7 ingredients and one pot required, this mushroom and bacon risotto is the perfect meal for while you are on the move. If you want to add a little extra kick, we suggest adding a splash of white wine. If you’re a vegetarian, why not swap the bacon for one of your favourite vegetables and the chicken stock for a vegetable stock? Oh, and swapping the parmesan for a sprinkle of feta cheese on top gives it that touch of restaurant quality!

Method

  1. Heat the oil in a deep frying pan or pot and add the onion and bacon, cooking for 5 minutes. Add mushrooms and cook for further 5 minutes. Stir in the rice and cook until it goes clear and all juices have been absorbed.
  2. Gradually add the stock, about half a cup at a time, stirring well and waiting for the stock to be absorbed before adding more. This process will take about 20 minutes.
  3. Once cooked, serve with grated parmesan.
